Yes, I’m Finally Making It!
Okay, I know . . . a lot of you have asked me to make this one and I’m definitely late to the party! We really appreciate how much you love our dupes and it finally felt like the right time to dive in. Honestly, a main reason I hadn’t yet was because I’ve always shared a vegetarian dupe version, but after making this one, the key ingredients really are the chopped salami and parm . . . and I loved enjoying salami in a salad! Might have been a first!
If you are an obsessive recipe saver like me, you’ve probably seen a few versions of the Italian Chopped Salad on your feed. There’s a reason it went viral - it’s bold, tangy, crunchy and absolutely addictive. And after making it myself (more than once...okay, more like five times), I get it. This salad lives up to the hype.
It originally rose to fame largely because of its link to the Kardashians. For years, fans noticed the Kardashian sisters regularly featured a particular chopped salad in their episodes, social media and even paparazzi shots. That salad came from Health Nut a California-based cafe and typically includes shredded romaine, salami or turkey, mozzarella, chickpeas, and a tangy Italian-style dressing - all chopped super fine so every bite is loaded with flavour.
So, while this isn’t new news, I wanted to share my take on the now-iconic chopped salad that’s taken over kitchens and TikToks alike. Because if there’s one thing we love around here, it’s finding those crave-worthy flavours and making them easy to recreate at home.
The classic way is to chop everything up even smaller than I did . . . but I was too keen to eat it and couldn’t be bothered!
Let’s get chopping!
INGREDIENTS
Serves 4
SALAD DRESSING
4 Cup Extra-Virgin Olive Oil
2 Tbsp Red Wine Vinegar
2 tsp Dijon
1/2 Tbsp Oregano
2 tsp Garlic Powder
2 tsp Sea Salt
Black Pepper to taste
SALAD
4 cups iceberg or living lettuce finely chopped
3 cups romaine finely chopped
1 long english cucumber chopped
1/2 - 3/4 cup salami finely chopped. (can sub turkey breast or use both)
1 small can chickpeas, drained and rinsed
½ cup olives chopped
1-2 tomatoes, chopped
½ cup parm plus more for topping
DIRECTIONS
DRESSING Combine all ingredients in mason jar or blender and mix until well combined.
SALAD Wash, dry and chop the lettuce and add to a large bowl. Add everything else along with 5-6 tablespoons of the dressing and toss to coast. Taste to see if you want more dressing then add to a serving plate and top with more parm. I want to get one of those salad chopper knives you use once all the ingredients are in a bowl, so if you have one, this is the time to use it! (Okay, I just added it to my amazon cart!)
