The Lazy Gal Salad Recipe
When summer rolls around, I’ll be honest, I can get a little uninspired (and dare I say, lazy) in the kitchen. But this dish? It’s the perfect solution. Incredibly fresh, light, and packed with flavour. It pairs with almost anything, but trust me, it’s especially amazing alongside whatever you're grilling. Chicken? Perfect. Corn on the cob? Perfect. Veggie kebabs? Amazing.
With just a few ingredients in both the salad and the dressing, it’s so quick to whip up - even when you’re feeling lazy.
serves 4
INGREDIENTS
2 Heads romaine, chopped
1 long english, chopped
4 Green onions, chopped
1 Handful of fresh dill or whatever herb you have on hand
1/3 cup Feta cheese
Optional - whatever else is in the fridge and needs to be eaten!
DRESSING
Juice of 1 lemon
1/4 cup extra virgin olive oil
Salt
Black pepper
DIRECTIONS
Chop or tear lettuce into bite size pieces, finely chop the green onions and dill, crumble feta and add all of the ingredients to a bowl.
Make the dressing by adding all of the ingredients to a separate bowl and whisking them together.
Pour some of the yummy dressing over your greens (taste to see if it is dressed to you liking), mix and enjoy!
