Grilled Peach + Goat Cheese Salad

with blueberries, toasted walnuts & balsamic vinegar dressing.

Sweet warm peaches, bitter/spicy arugula, creamy/tangy goats cheese and crunchy walnuts come together for summer salad perfection! Easy enough for a weeknight, gorgeous enough for company, take your salad to the next level!

DELICIOUS, NUTRITIOUS, UNIQUE!

WHAT YOU’LL NEED:

serves 2

  • 5 cups of Arugula

  • 1/3 cup blueberries

  • 1/2 cup goats cheese (or feta)

  • 1/2 cup walnuts

  • 2 grilled peaches drizzled with a little honey (can skip the honey, but YUM)!

  • Honey for drizzle (optional)

Dressing:

  • 1/2 cup evoo

  • 2 tbsp balsamic vinegar

  • 2 tsp dijon mustard

  • 1 tbsp honey

  • 1 small clove of garlic

  • crack of pepper

  • pinch of salt

HOW TO:

  1. Heat up that BBQ!

  2. Halve and pit the peaches

  3. Brush each cut side with olive oil

  4. Grill, cut-side down, over med. heat for 4-5 mins

  5. Flip the peaches and cook until tender, 4-5 mins then drizzle with honey.

  6. Add all the dressing ingredients to bowl or mason jar and combine.

  7. Dress your salad & enjoy!
