Kourtney Kardashian Salad

From a family who loves salad as much as the spot light, here’s Kourtney’s current go-to salad order. If you have ever watched Keeping Up with the Kardashians, now ‘The Kardashians’ on Hulu (guilty)!, you know how much they love to order salads for lunch. Apparently, this is the salad Kourtney Kardashian has been ordering for her work meetings.

I gave it try and can attest it’s totally delicious. The dressing is simple and chances are you have made a version of something similar in your day.

The entire salad is quite simple, and that’s why I love it. Healthy doesn’t have to be complicated, and neither does delicious food!


INGREDIENTS

Dressing

  • 1/2 freshly squeezed lemon (original recipe has 3-4 lemons which I though was bonkers)

  • 1 teaspoon dijon mustard

  • 1 teaspoon honey or maple syrup

  • 2 teaspoons extra virgin olive oil

  • 1 teaspoon rice vinegar

  • salt and pepper

  • 1-2 tablespoons sunflower or pumpkin seeds

Salad

  • 2 cups romaine lettuce, chopped

  • 2 carrots shredded or spiralled

  • 2 Persian or half a long english cucumbers, sliced

  • ½ large ripe avocado, sliced (original recipe has an entire avocado and no seeds, but I prefer less avo and a different source of fats that has crunch)

  • ½ cup organic chicken breast seasoned with salt, lemon pepper, and the juice of half an orange. (To keep it vegan substitute cooked tofu, tempeh, or drained and rinsed chickpeas)

  • touch of avocado oil for the pan

DIRECTIONS

  • Cook your protein however you like, cut into cubes and add the juice of half a fresh orange.

  • Toss all your dressing ingredients in a jar and shake it up.

  • Prep your salad ingredients and add to a bowl, top with avocado, seeds and dressing. Toss and enjoy!
