Thai Salad Recipe

Raw Zucchini-Noodle Pad Thai

Zucchini makes the perfect noodle substitute in this colorful raw pad thai.  If you don't have a spiralizer, you can use the sauce to make a killer salad using the same veggies featured in this recipe. Just substitute the noodles for your favorite greens. A mix of romaine and kale work great!

When you are preparing to do a Juice Cleanse it is important to spend a few days eating lots of fresh, wholesome, high-fibre foods.  When you can make it raw, it's even better!  This meal is perfect! If you are doing a Juice Till Dinner Juice Cleanse, you should definitely plan to include this in your meal prep.

This sauce is a definite favorite. Feel free to make it your own with different spices. I love to add turmeric and curry powder for extra flavor and for their anti-inflamatory properties! This sauce also makes a  perfect dip for veggies or homemade fresh spring rolls.

For the Peanut Sauce:

leaf4 1/2 Cup Natural Peanut Butter

1 Cup Canned Coconut Milk

1 Tablespoon Tamarileaf4

leaf4

2 Tablespoons Maple Syrup

leaf4 1 Teaspoon Toasted Sesame Oil (optional)

leaf4

Juice of 1 Lime

leaf4 2 Cloves of Garlic

leaf4

1/8 - 1/4 Teaspoon Cayenne (start with 1/8 and taste to see if you want more kick!)

leaf4 Pinch of salt, or to taste

leaf4

1/2 Teaspoon Tumeric Powder (optional)

leaf4 1/4 Teaspoon Curry Powder (optional)

Blend all ingredients in a high speed blender.

 

For the Veggies: leaf4 2 Medium Zucchini, made into noodles using a Spiralizer

leaf4 1 Red Bell Pepper, cut into thin slices

leaf4 1-2 Carrots, peeled into thin slices

leaf4 2 Green Onions, chopped

leaf4 1 Cup Romaine, thinly sliced

leaf4

Purple Cabbage, thinly sliced

leaf4

1/4 cup cilantro, chopped

leaf4 Cashews or Peanuts, for garnish (optional)

 

Spiralize the zucchini and add to a large bowl. Mix in the rest of the veggies. Make it good and saucy and enjoy!
