Raw Zucchini-Noodle Pad Thai
Zucchini makes the perfect noodle substitute in this colorful raw pad thai. If you don't have a spiralizer, you can use the sauce to make a killer salad using the same veggies featured in this recipe. Just substitute the noodles for your favorite greens. A mix of romaine and kale work great!
When you are preparing to do a Juice Cleanse it is important to spend a few days eating lots of fresh, wholesome, high-fibre foods. When you can make it raw, it's even better! This meal is perfect! This sauce is a definite favorite. Feel free to make it your own with different spices. I love to add turmeric and curry powder for extra flavor and for their anti-inflamatory properties! This sauce also makes a perfect dip for veggies or homemade fresh spring rolls.
For the Peanut Sauce:
1/2 Cup Natural Peanut Butter
1 Cup Canned Coconut Milk
2 Tablespoons Maple Syrup
Juice of 1 Lime
2 Cloves of Garlic
1/8 - 1/4 Teaspoon Cayenne (start with 1/8 and taste to see if you want more kick!)
1/2 Teaspoon Tumeric Powder (optional)
Blend all ingredients in a high speed blender.
Purple Cabbage, thinly sliced
1/4 cup cilantro, chopped
Spiralize the zucchini and add to a large bowl. Mix in the rest of the veggies. Make it good and saucy and enjoy!
