Who doesn't love a dessert you can feel good about eating? These raw vegan cheesecake cups are as beautiful as they are delicious, and a great way to use up the season's bounty of fresh berries!

Ingredients

2 Cups Cashews

1 Cup Cacao Butter

leaf41/2 Cup Maple Syrup

leaf4

1/3 Cup Coconut Oil

leaf41/2 Cup Blueberries

leaf4 1/2 Cup Cherries

leaf4

1/2 Cup Lemon Juice

leaf41 tsp Apple Cider Vinegar

leaf4 1 tbsp Vanilla Extract

leaf4

1 tsp Vanilla Bean Powder

Directions

1. Melt down Cacao butter in a double broiler, melt coconut oil.

2.  Add all ingredients into a high-speed blender and blend until very smooth.

3. Pop in the freezer for 1-3 hours to set, or overnight in the fridge.  Add to mason jars. At Young and Raw they suggest adding the filling to an almond crust to easily turn it into a pie.
