Macrobiotic Tofu and Veggie Bowl with Citrus Dressing

This is the kind of meal you think about all day long. Deeply nourishing,  bursting with flavour, and incredibly satisfying. The kind of meal that makes you feel like a vegan unicorn.  Thank you our talented friend Kristen aka @foodtosaveyoursoul for supplying us with this fantastic recipe. Enjoy!

To make the Carrot Red Pepper Dressing:

In a blender combine:

2 medium/large carrots, peeled and grated

leaf41 medium red bell pepper, seeded and chopped

leaf42 to 4 cloves garlic

leaf41 to 2 TBSP of tamari

leaf41 TBSP maple syrup

leaf41/3 cup filtered water

Blend on high until smoothie, at least one minute

To prepare the grains:

leaf4Cook 1 cup of dry quinoa (I use a rice cooker) with a ratio of 1 cup quinoa to 1.5 cups filtered water or broth

For the roasted Veggies:

Preheat oven to 400F

leaf41 large red or orange yam, cubed

leaf41 medium red onion, sliced

leaf41 large zucchini, cut into 1/2 inch thick disks

leaf42 tbsp coconut oil, melted

leaf4sea salt and black pepper, to taste

Chop veggies and toss with coconut oil to coat, then season with sea salt and black pepper

Flip veggies half way through roasting

veggiesFor the raw veggies:

1/2 of a large avocado, cubed

leaf4

2 cups shredded romaine

leaf4

2 cups tender baby spinach leaves

leaf4

2 cups shredded red cabbage

leaf41 cup fresh cilantro, chopped

For the Tofu Marinade:

leaf4

1 orange, juiced

leaf4

1 lime, juiced

leaf4

2 tsp. tamari

leaf4

1 tsp. maple syrup

leaf4

1 tsp sesame oil

leaf4

2 cloves garlic, minced

To prepare the tofu

leaf4350 grams organic firm or pressed tofu

Place tofu, cut into cubes, into a glass dish with a lid and add the marinade. Place in the fridge for at least an hour, or up to overnight.

To assemble: 

Place equal amounts of everything into 4 large bowls and top with 1/4 cup of dressing. Serve warm or cold.
