Creamy Chipotle Sauce – Vegan
¡Ole ole! My husband is a massive fan of "spice" when it comes to what is on his plate. Making vegetarian Mexican dishes that are authentic, delicious and totally satisfying are easy when you have this sauce in your repetoire.
3/4 cup raw cashews
1/2 cup water
1 teaspoon kosher salt
1 chipotle chile in adobo sauce
Blend all ingredients in a high-speed blender.

Fry up some black beans and cubed tofu. Steam some corn and maybe some edamame beans. Chop up a little red onion and cilantro. Mix it all in a bowl and add as much sauce as you like. Then throw that yummy mixture into a taco or burrito. Top with chopped romaine, diced tomato, avocado and cilantro.
Take the taco mixture from the above recipe and put it over a bed of shredded romaine. Top with diced tomato, avocado and cilantro. Sunflower sprouts take it to the next level. For added crunch, sprinkle on some pumpkin seeds or a handful of broken tortilla chips.
