Brownie Bliss Balls

These wholesome brownie bites make the perfect chocolatey treat or snack to go.  Made with dates, nuts and cacao, you can feel good about eating these brownies.

Makes about 15 balls or 25 small cookies

Soak for at least an hour, and up to 3 hours:

leaf41 cup chopped pitted dates

In a good processor, combine:

leaf43/4 cup raw shredded coconut

leaf41/2 cup raw cashews

leaf41/2 cup ground pecans/almonds/walnuts

leaf43 TBSP cacao powder

leaf42 TBSP lucuma powder


1/2 tsp sea salt

Process until you reach a fine flour-like consistency.

Add to the food processor:

leaf4Dates (discard soak water)

leaf42 oz chopped organic 70% dark chocolate

leaf4Optional: 1 to 2 TBSP finely ground coffee

Process again until everything comes together and the mix begins to pull away from the sides of the food processor. If the mix seems too dry, add 1 tbsp melted coconut oil.  It should hold together when squeezed.

Once everything is mixed, pour into a bowl and form into balls, or pour into a parchment lined pan, press down firmly to compress everything, and then cut shapes using a cookie cutter.  Refrigerate for about 30 minutes to set, and then eat, nourish and enjoy!

Store in a glass container with a sealable lid in the fridge for up to one week, or into the freezer for up to one month.
