Baked Oatmeal 3 Ways

Baked banana oatmeal with raspberry, blueberry and kiwi

1/2 cup rolled oats

1/2 cup vanilla almond milk (or use any milk of choice with 1/2 tsp vanilla extract)

1/2 tsp of ground cinnamon, nutmeg and ginger

1 mashed banana

Fresh fruit of choice (berries, kiwi, peach, pear, apple, passion fruit etc)
1 egg white for extra protein and to help the mix bind or alternatively add 1/2 tbs chia seeds

Optional - you can add baking powder to make the mixture rise more

1: Add oats, milk, spices, mashed banana and egg white/chia seeds together. 
2: Mix until well combined. Pour in to oven proof dish and assemble fruit on top of mixture. 
3: Bake at ~180degrees Celsius until lightly browned and cooked through. - Baking time will depend on the size of your dish and your oven. These little ones baked for about 10-15mins! 
4: Remove from oven and serve with more fresh fruit, nut butters, yoghurt or whatever you desire
